Makin Pizza

I have been making my own pizza bases for a while now. It is does take an over an hour to have cooked pizza. 5 minutes prep, 10 minutes kneading, 30 minutes to let it rise, 5 minutes to knead and roll out, 10 minutes to top and 20 minutes in the oven. But when you can have the toppings you want on a fantastic tasting base, whats not to love.

lets get the recipe out of the way

This makes 2 thin crust pizzas or one deep pan.

  • 2 cup plain flour
  • 8 g dry yeast(one sachet or 2 tsp)
  • 1 tsp caster sugar
  • 1/2 tsp salt
  • 2 tbs olive oil
  • 3/4 cup lukewarm water

mix dry ingredients, make a well in the middle and add the oil and water. Mix until a soft dough is formed.

Move the dough to a floured surface and knead for 10 minutes or it is smooth and pliable.

Place in a lightly oiled bowl cover with plastic wrap and allow to rise in a warm location for 30 minutes.

Before kneading the dough again, punch the dough a few times to remove any trapped air, then knead for a minute.

If you want 2 bases cut the dough in half. Roll out the dough to the required size.

I top my pizza in this order: sauce, cheese, vegetables(onion, capsicum, mushrooms etc) meat/cheese(pepperoni, ham, feta) then top with a small amount of cheese to bind the top. In general i will only have 3-4 toppings other than cheese and sauce. This limits the flavor competiton between ingredients.

Today's pizzas had,

  1. Onion, capsicum, Kabana and Chorizo.
  2. Onion, capsicum, sun dried tomatoes, kalamata olives and feta cheese.

It was a great day for pizza. The base turned out perfect and the toppings were pretty good also.
